Create the Must Expand

Combine fruit, water, and sugar until fully dissolved. This mixture is the must.

For citrus wines, add pectic enzyme to help clarity and yeast nutrient for a healthy ferment.

Stir well to dissolve sugar and distribute ingredients before pitching yeast.

Take a Hydrometer Reading Expand

Gently lower the hydrometer into a test jar, let it bob, then read at the liquid line.

Most hydrometers show multiple scales:

  • SG (Specific Gravity): primary scale for wine. Track OG and FG here (e.g., 1.090 down to 1.000).
  • Potential Alcohol: a quick estimate based on SG (e.g., 12%–13%).
  • Brix/Plato: sugar concentration often used for beer/cider (e.g., 20° Brix / 20° Plato).
Move to Secondary (Carboy) Expand

Siphon the wine off the sediment into a clean, sanitized carboy.

Keep the tubing tip above the sediment and minimize splashing to reduce oxygen pickup.

Fit the airlock and keep headspace low.
